Nvidia is a for-profit company. Right now GPUs and ARM CPUs are the biggest sellers so that's what they're going to make.
You may want to ask smaller, low-volume entities for RISC-V hardware, such as the Raspberry Pi Fondation. Keep in mind that even their newly-launched 4$USD Raspberry Pi Pico uses a dual-core ARM CPU.

RISC-V has an interesting future, but we are still years away from a package to compete with other high-end CPUs and the tooling surrounding it.

Yes they are a for-profit company .. that's why I am saying shareholders and people making purchase decisions should reward them for short term gains.
